Parmentier was born in Montdidier. He studied pharmacy and at 20, he was appointed military pharmacist in the French army during the Seven Years’ War. Captured by the Prussians, he discovered in Germany the nutritional benefit of the potato, for which he became famous. He was the first president of the French Academy of Pharmacy and he participated to many scientific projects in the area of agriculture, hygiene and vaccination.
